Breakfast:
- Eggs, spinach, cheese scrambled
- Orange juice
Steamed rice for lunch. Need to allow a LOT more time in the morning for food preparation.
Lunch:
- Cheese and rice
- Orange
- Edamame
- Hard-boiled egg
I haven’t hard-boiled eggs in a LONG time. They turned out perfect! Cheese and rice is pretty tasty, I think.
Dinner:
- Spinach salad with a soy sauce vinaigrette. Sprinkled with shredded cheddar cheese.
- Fried tofu with a orange soy sauce reduction over brown rice

Ok you are on my winners list now… looks like you had day one all planned out.
You are lucky you went to Costco before it began! Also, I think the food you pick gives you a variety..which I’m jealous of..I swear I can’t do anything with mine!
